How to eat Khinkali

Pkhali is a type of Georgian salad made from several different vegetables like eggplant, spinach, beans and walnuts. It often has cooked grape leaves mixed in for added flavor. The dish itself isn’t exactly appetising looking — pkhali looks more like mush than anything else — but tastes great when combined with Georgian spices such as garlic, coriander seeds and walnuts. It’s typically eaten as an appetiser before the main course.


Lobio is a bean soup often cooked and served in traditional clay pots, it’s a popular dish in winter time. The most popular way to eat Lobio is over Georgian bread known as Mchadi(corn bread).
